I just bought a square ribbed (Lagostina)frying pan after seeing it in a cookbook of mine.Since I am new to cooking,what purpose does this frying pan offer that a regular frypan can"t provide?

you can actually mimic cooking on an outside grill with one of those grill pans. i personally don't like them and don't use mine a lot. I have one from All Clad. i live in california and the weather here is good most of the year and i just bbq outside instead.

There used to mimic grill marks on steaks, fish, grilled cheese etc. It also allows for drainage of fat. There not any good for eggs.
