They are treating you like a part of the family and that is wonderful!
If you can afford it, take them to dinner at a really nice restaurant, possibly somewhere they wouldn't normally think of going (a new dining experience, like a foreign cuisine).
What will mean the most to them, I am willing to bet, would be a hand-written, heart-felt thank-you note after you get back, expressing your deep appreciation for their acceptance and thoughtfulness and generosity. Send it with a bouquet of flowers.

Don't bring something, wait during your vacation time together to see what they like. You may find you know them better to get them something they appreciated during your vacation or if not, to send them something after the trip as your thank you. If you could not find something during the vacation, then sending a nice gift basket after would be a great option. It's not the norm to bring the thank you gift.

All of the above suggestions are really good. If they are picking up the tab for most of the trip you can definately take them out for dinner one night during the trip and pay for it.

I think it would be great if you took alot of pictures on the trip, especially of them, then when you get home, make a real nice scrapbook for them.
Also when your on your trip, watch to see if they mention some little momento that they admire but don't buy, then if you can be sneaky and buy it when there not looking, you can give that as well.
