ps. that's too bad about the veggies- i already steam, stirfry, and make soup etc. all the time- i have a new baby in the house and a 5 yr old so i was looking to make a meal i didn't have to tend to all the time! oh well?

I agree with the above poster.
If you want to cook veggies, you may want to look at those new Reynolds (I think) SteamBags.
Or, if you have a steamer, use that.

Now, if you wanted to make something like a veggie soup, you may get away with doing that in the crockpot.

The secret is to start with the root vegetables:
Potatoes, turnip, carrots, parsnips, on the bottom.
Then add flavourings like onions, leeks, garlic, celery, etc.
Cheaper cuts of meat are ideal next.
You only need add 1 cup of water, stock, wine, beer, etc.
enough usually comes out of the veggies & meat.
You can add small veggies (peas, corn, green beans, etc.)
during the last 10-15 minutes, just to add more colour.
Sometimes I also add 2 tbsp flour in 1/2 cup water to thicken.

In all honesty I would not cook vegies in there. They are far better steamed or boiled lightly. My experience is that they come out way overcooked and mushy in a crock pot. And I dislike them cooked that way. It is much better for cooking meat than vegs.
