Not too long ago, I read in a book about resume writing that it's not necessary to put down EVERY job you've ever had on your resume, especially if it doesn't pertain to the position you're seeking. However, if that's the case, does that also mean that I can omit certain jobs from my work history on a job application?

I omit everything before 1978 and next time might only go back to 1989 or 1994 depending. If you put down the last 3 jobs or back 10 or more years you should be fine. Nobody really cares about a job you had for 6 months in 1967.

if the application says to write down the last 5 jobs, thats what I do. But only the last 5 jobs that are on the resume.

The resume must match the application.
