If you're looking for an easy recipe, then this one might not be for you. Its got several steps and some great ingrediants, so give it try:

Jenny's Meatloaf Madness

2 lbs lean ground beef
3 eggs, beaten
1 cup diced yellow onion
10 slices thick platter bacon, peppered preferred
1 15 oz can diced tomatos
1 cup Italian Bread Crumbs
3 T Worcestershire sauce
1 T minced garlic
1 tsp kosher salt
1/2 tsp fresh ground pepper
3 T brown sugar
1 T dijon mustard.

Preheat oven to 350 degrees.
Mix meat with eggs, Worcestershire sauce, salt and pepper.
In skillet saute chopped bacon with onion and garlic.until translucent and cooked thru but not overly done. Drain and add tomatos. Bring to a boil, then reduce and simmer for 15 minutes, or until mixture thickens slightly. Pour half of the mixture into the meat mixture and add bread crumbs. Mix and form into a loaf. Place in baking dish. Add brown sugar and mustard to tomato mixture and bring to a boil. Simmer for a couple of minutes and pour over the top of meatloaf. Cover and bake for 1 hour. Let sit for 15 minutes before slicing.

garlic powder to taste

1/3 cup ketchup
1/4 cup packed brown sugar
1/4 cup pineapple preserves

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the ground beef, bread crumbs, egg, garlic powder and Worcestershire sauce. Mix well, and place into a 9x5 inch loaf pan.
Bake in preheated oven for 30 to 50 minutes.
Meanwhile, in a separate medium bowl, stir together the ketchup, brown sugar and pineapple preserves. Pour over the meatloaf about 20 minutes before removing from oven.

This is the best Meat loaf ever.

good ground chuck or beef
ground pork
garlic
mustard
ketchup in meatloaf & on top)
1 cup nice bread crumbs
3/4 cup milk
egg
worchestire

onion sliced really small
carrots chopped in small, small pieces
celery chopped in small pieces

preheat oven to 350

Saute onion, carrots & celery in butter on stove til nice and tender. Add to all the other ingredients and mix until nice and combined. Place blob on cookie sheet covered with foil, shape in a nice oval. Cover with ketchup and spread evenly over the whole top. Bake about 1 hour until done.

I always make a huge amount because I like it in sandwhiches the next day.

MEATLOAF WITH BARBECUE SAUCE


500g{1 lb} sausage mince
500g{1 lb} minced steak
1 cup fresh breadcrumbs
2 onions. fine chopped
2 teaspoons curry powder
salt, pepper
1 tablespoon chopped parsley
1 egg
1/2 cup milk
1/4 cup water
1/4 cup of the sauce

make sauce first

Sauce

1 cup water
1 cup tomato sauce
1/2 cup worcestershire sauce
4 tablespoons vinegar
1/2 cup brown sugar
2 teaspoons instant coffee powder { yes coffee }
60g { 2 oz } butter
4 tablespoons lemon juice

combine all ingredients in a saucepan and bring to the boil.
reduce heat and simmer for 5 minutes.
take out 1/4 cup for meatloaf and set aside thicken sauce with corn {maize} flour.set aside


meatloaf

combine sausage mince, steak mince, breadcrumbs, onion, parsley, curry, salt, pepper, egg, and the 1/4 cup of unthickened sauce. mixl till well combined. slowly add milk and water till mixture is smooth .

shape mixture into a loaf and place in a baking dish.
bake in a moderate oven for 30 min. remove from oven and pour half of the thickened sauce over the meatloaf, return to oven and bake for further 45 mins - 1hr depending on oven less if fan force.
basting frequently serve with remaner of sauce warmed.

this is great cold with salad the next day as well

I use the recipe that is on the box of Lipton Recipe Secrets Beefy Onion mix. It is very tasty!

Ground beef & pork, fresh bread crumbs, 1 egg, milk, ketchup, mustard, minced onion, garlic powder, worchestershire sauce - mix well, shape and bake @ 350 about an hour.

Half loaf of bread (torn into pieces)
Bake all at 350F 30 mins
Top with ketchup

1 pkg of Stove Top Stuffing.

Mix them all together and bake at 350 for about 45-1hr.
Delicious!
