I have a ginger cat with faint dark ginger stripes and a white bib under his neck and a little bit on his face. I also have a black cat with a white bib around her neck, her paws and a little on her face. As you probably guessed, they're siblings and i think they came from a tortishell but i'm not sure. They are very pretty cats but what breed are they both. The black cat is Sooty and the ginger is Sonny.

If they are shorthairs, they are called DSH...domestic shorthairs. Then color......orange tiger with white, black with white.

Not a breed. Just a coat length and color. What one could call "mixed" cats.

Well, a tortoishell cat has more Xs in their genes than a normal cat. Ususally one x has one color, another another color.. so on and so on depending on how many different colors in the tortoishell/calico there are. The Ginger cat is technically called a Orange Tabby with White, and the other is a common two toned Calico. Usually vet places will shorten these to Orange Tabby and Calico (or Tuxedo, they love to call ALL calicos Tuxedo cats, even if the markings arent Tuxedo).

Both would be quite reasonable to come from another tortoishell cat. A little ovaerall lesson in Biiology about Genes and Heredity and you could understand why if you wanted to, or just ask here about it and Im sure loads of people (including myself) would be glad to tell you why a calico is.. a calico.

Also, usually Ginger is a word used for all orange cats, with little to no strips or spots. Tabbies are known for their stripes or spots, where there usually are two colors, one being a darkershade of the color, and the other being a lighter shade.

It's all a mix match with cats. Unless they're pure breed, with color coding already established hard to say

They don't sound like any breed of cat. They are probably just moggies (i.e. non-pedigrees cats- no breed...)
