A friend deep-fries her turkeys at thanksgiving and re-uses the oil at christmas. She's been wondering about re-using the oil from last year. Can't she kill people like this?

As long as it was strained and stored in the fridge it would last.
I would use that each time I needed some, and add some fresh at Christmas.
It is only a month.

I don't know about people dying. I think it would definitely be best to get fresh oil. When she used it last, it was raised to a temperature that would kill any bacteria, although you don't know what's been going on inside the oil while it's been dormant. How well was it stored? If she used the old oil, it would probably add a little unfavorable flavor to the new fried item, and the food may absorb more oil than if you were using fresh oil. When water and other liquids get into the oil, it diminishes the quality of the oil. Oil should be changed often for the best tasting fried goodness. You know the oil's bad if it has darkened from its original color.

Oil can become rancid if kept too long. Probably OK to use the November oil in December especially if its kept cold but last years needs to be disposed of.

Even if it's safe, which I think it wouldn't be, the old, dirty oil is going to give your food a very bad taste. Oil is not expensive. There is really no reason not to use fresh oil.

yep she certainly can, oil should only last in d deeep fryer for about 2 to 3 weeks only. depending on wat you fry like if you fry chip 3 weeks should do but if it is fish ,chicken poultry and all dem then 2 weeks is beter bcos of the smell nd darknes of the oil..
