The Airbags in car wouldnt open by itself if you are just going at high speed.

Airbags will deploy only if there is an sudden deceleration (reduction in speed). The airbags also won't inflate fully. The amount to which the aribag opens depends on the severity of the crash.

And once the airbags have deployed, it will deflate to a certain extent very quickly.

All of the answers above are correct to one extent or another.
A combination of events cause the circuits to close and deploy airbags. Side and frontal airbags have different parameters. All the manufacturers have certain criteria for deployment and none of it is published (for legal reasons).
When an airbag deploys, it inflates fully (even smart 2 stage bags). They inflate at different rates, depending on the severity of the crash, the occupants in the seat and the vehicle crash angle.
In general, most airbags deploy in decelerations exceeding 15mph at angles within 15 degrees of dead center.

Most air bags will operate at any speed if two out the three sensors are tripped. Speed can be relative since there are different angles of collision that could either trigger/not trigger two sensors.
