I would suggest cutting small slits in it, and inserting pieces of onion into the slits...then sprinkling with salt and pepper...Put it into a baking dish,cover with foil, and bake at 350F for about 90 minutes, depending on the size of the roast. I would also suggest either mashed potatoes and green beans, or scalloped potatoes and broccoli. Good Luck to you! :)

This is a recipe I've used for years and very different than most pork roast recipes. Every time I serve it I get raves and people always ask for the recipe. In fact... someone I gave the recipe to made it at a dinner party and a friend recognized it as my recipe.... now there's a tribute...when someone makes your recipe for their guests. However, it's not really MY recipe... I got it from Jeff Smith... the old Frugal Gourmet. I just share it with everyone and give him all the credit. VERY EASY....
Cranberried Pork Roast
This recipe is for a 3 - 5 lb roast. Take your roast and rub it with oil, salt & pepper and put it in the oven at about 350 degrees. Let it cook about 1 hour (depending on size of the roast... less time for smaller roasts) While your roast is cooking make the sauce.
You will need:
1 medium onion
1 can Ocean Spray Whole Cranberry Sauce
1 cup orange juice (more of less)
approx 1 heaping tsp cinnamon (kind of to taste)
Saute the onion in a little butter, then add the rest of the ingredients. The cranberry sauce will blend with the orange juice and make a delightful fruity sauce. You want it the consistency of a thin gravy... it thickens nicely as it cooks.
During the last hour of cooking your roast, baste it every 15 minutes until your ready to pull it out of the oven. Be liberal with the sauce... you'll want lots... it delicious. The sauce acts like a glaze and keeps the roast tender and juicy. And towards the end of the cooking time, it sort of caramelizes on the roast and gets crispy around the edges.
Everyone loves this recipe. It ends up tasting like a not-so-sweet bar-be-que sauce but without the tomato overtones. It's very delicate and mild. It turns almost a med brown color when it blends with the juices from the pork roast... yum-oh.
Serve with some boxed wild rice (add some toasted almond slivers and canned mushrooms) and roast some asparagas as long as you have the oven on. Just clean the asparagas and drizzle it with olive oil, add salt & pepper. Put it on a flat cookie sheet in a single layer and roast about 15-20 minutes... until it's tender and a little golden brown. Then serve with some canned cranberry sauce on the side and you're good to go. Easy and elegant!

Place your pork loin right now into a brine. ! gallon of water + 1 cup salt (I use kosher or sea salt if you only have the iodized stuff cut back by a quarter of a cup)+ 1cup of sugar. Let it soak in fridge for at least 24 hours. When you go to bake it put just a light dusting of salt. Put lots of coarse black pepper, and lay some sprigs of fresh rosemary on top. Bake on a high heat 400+ for about thirty min. then turn heat down to 300 and cook until done. The done temp will be 155- 160. I take mine out at 155 and let it rest for 20 min. The soaking will make your pork moist all the way through. I got the Idea years ago and do this to all my turkey, chicken and pork.
Side dish. Lemon red potato's. Half some baby reds, add olive oil, fresh lemon juice,salt and pepper, and whatever your favorite herbs are, toss well. Dump on baking sheet and place in oven and bake until golden brown, or if you want to do them on the stove top in a large saute pan. You can't go wrong with lemon potato's.

Slow cook (180C) with Honey & some fresh Rosemary (make sure to put water in the roasting dish and cover with foil. Cook as per weight then 25 minutes before take off foil to crisp up outer skin. A great side dish is finely sliced cabbage with onions & sage. Slice white cabbage thinly, boil for 2 minutes in salted water. Remove and drain, slice onions. Place cabbage and onions in a frying pan with some vegetable oil and fry, add the sage & some salt & black pepper to taste.
Also you could do some mashed sweet potato & carrot, just mash together & season well
I've done this loads of times so it works well.

ROAST LOIN OF PORK
1 (5-6 lb.) pork loin
1 tsp. crushed rosemary
2 tsp. seasoned salt
1 tsp. pepper
Have meat at room temperature. Wipe dry. Place fat side up on rack in roasting pan. Combine seasonings; sprinkle over roast. Bake at 325 degrees, allowing 24 minutes per pound (2 to 2 1/4 hours) or until meat thermometer reads 170 degrees. Makes 6 servings.
Tip: Serve with applesauce or spiced crab apples, mashed potatoes, and tossed green salad.

I would stick that puppy in a crock pot with garlic and salt and just a little water 1 inch on the bottom and let it slow cook 8 hrs to make the meat very tender mmmm.... Cut up some celery and carrots and big cubes of potatoes and add them after 5 hours and you got yourself a darn good meal. Don't forget the dinner rolls. Can I come over?

Oven roasting it would be a good way to go. You could do a rub with sage, thyme, rosemary, salt and pepper. You could also do a sweet glaze using fruit juice, or honey, or even maple. With pork however you should be sure to either cook it in an oven bag or make sure to baste it often to aviod drying it out. As for a side yams, fresh steamed green beans, mashed potatoes, green salads, and bread dressings are all good.

Well this is what I do to pork loin roast. Take a knife and poke several holes in the roast and stick a garlic clove in each hole, rub with a little olive oil and brown up nice and then put into the oven and roast with a little rosemary on it. Potatoes and gravy, green bean casserole.

I put my pork roast in the crockpot with a package of dry onion soup mix. Let it cook on low for 8 hours or on high for 4 hours. It is tasty and tender.
Side dish - cheesy potatoes and green bean casserole - can both be cooked in the oven at the same time.
Have fun with your parents.

when it starts to defrost some you can marinade it in a sweet and sour type sauce with pineapple and it juice and some brown sugar than you have Hawaiian pork . rice with it is good also if you want you can cut it and place it in the crock pot with the seasoning of you choice and still make rice , noodles or potatoes.
