CHILI CHEESE FRITO CASSEROLE
chili cheese Frito casserole
1 pound ground beef
1/2 bag chili cheese Fritos
1 small can olives sliced, drained
1/3 cup diced sweet onion
1 cup Prego spaghetti sauce
2 cups shredded cheese, reserve 1 cup for topping
1 can corn, drained
salt and pepper
Brown ground beef with onions, salt and pepper to taste. Drain.
In a bowl, combine all ingredients except one cup of cheese. Mix well, spread in a 13 x 15" casserole dish, and top with cheese.
Bake 30 minutes at 350°F.
Enjoy.
COC-A-DOODLE CASSEROLE
1/3 cup chopped green pepper
2 tablespoons chopped onion
4 1/2 oz mushrooms
2 tablespoons butter
1 15 oz can cream corn
1 cup sour cream
2 cups cooked egg noodles
2 cups cooked diced chicken
Saute pepper, onion and mushrooms until tender in butter. Remove from heat and add corn and sour cream. Put noodles in bottom of 9x13 inch dish. Put chicken on top of noodles. Put cooked mixture on top. Mix lightly.
Bake 25 to 30 minutes until bubbly at 350F degrees.

Sausage Casserole Recipe
Sausage casserole preparation time: about 30 minutes
Sausage casserole cooking Time: 60 minutes
8 medium size good quality sausages (two per person).
I medium sized onion (leeks will do if you prefer)
4 shallots roughly chopped
2 capsicum peppers, sliced
2 crushed garlic cloves
1 400g tin of chopped tomatoes
1/2 pint of chicken stock
1 400g tin of lentils
1 tablespoon of cider vinegar
2 teaspoons of brown sugar
2 medium sized potatoes peeled and diced into cubes
1 sprig of chopped rosemary
Knob of butter
Sausage casserole recipe cooking instructions:
1. Melt the butter in a large heavy bottomed casserole dish on a medium heat on top of the stove. Pierce the sausages then brown all over.
2. Set aside the sausages, add the onions, shallots and garlic to the dish, cook slowly for about five minutes or until they start to become tender.
3. Add the cubed potatoes and fry for a further five minutes, taking care not to burn the onions and garlic.
4. Add the chicken stock gradually, stir well and add the sausages.
5. Slowly introduce half the rosemary and all of the other ingredients.
6. You are looking for the liquid to cover all of the sausages, the liquid to reduce down during cooking by as much as half.
7. Continue to cook on the stove for a few minutes gradually increasing the heat until the pot is simmering. Taste the casserole, if it's too acidic add a pinch or two of brown sugar.
8. Cook uncovered for about an hour in the oven at 180°C.
9. Remove from the oven, garnish with the remaining rosemary serve with fresh broad beans and rice, polenta or couscous.

I found this years ago on the back of a Tomato soup can, my family likes it and it is quick and easy.
1-can tomato soup
1/2 can of water
1/2 cup of salsa
6-corn tortillas-quartered
1lb ground beef
cheddar cheese
Brown ground beef and drain. Add to ground beef everything but the cheese stir until combined. put in casserole dish top with as much cheese as you like. Heat in a 350 oven until bubbly. Serve with shredded lettuce and chopped tomato and sour cream. You can change up the ingredients, use hot or mild salsa, you could even use ground turkey, or chicken instead of beef. You could also stir in some Spanish rice and a little more liquid. This is just the base of it, get creative and make it your own.

Boil 1/2 lb penne or rigatoni and drain. Stir in 3/4 cup ricotta, 1 1/2 cups red sauce, and 1 cup diced pepperoni (if desired). Pour into lightly oiled 2 qt casserole, top with 1 cup mozzarella and some chopped fresh parsley if you've got it on hand, or 1 tsp dry parsley (for nice color). Bake at 375 till heated through and cheese melts, about 20-30 minutes. Recipe can be doubled easily. Enjoy!

Depends on what kind of meat you want, flavours you like etc.
Ground Beef:
Cooked macaroni noodles, 1 or 2 packs dry onion soup mix, cheddar cheese (lots) and cooked ground beef.
Mix it all together and bake until cheese in melted.
My mom made this when I was a kid, it was always a favourite!
Chicken:
Any type of pasta, a quality pasta sauce, frozen mixed veggies (like the bags that have zucchini, carrots and snow peas in them, cooked chicken breast chunks or (moneysaver!) ground chicken.
Basically, for casseroles, anything goes. Most dinners you would make on the stovetop can be mixed together in a casserole. You like the flavour of noodles, diced tomatoes and hamburger? Instant casserole!
Also try turning your casserole into a pot pie. Take your casserole ingredients (vegetables and meat with sauce, St Hubert's dry mix is good for most) and put it into a casserole dish that has puff pastry lining the bottom. Another sheet of puff pastry on top and pot pie is born!

Corned Beef Casserole
12 ounces corned beef
4 potatoes, sliced
1 (10.75-ounce) can cream of mushroom soup
2 cups milk
Slice corned beef 1/4-inch thick or crumble. Thinly slice potatoes. Alternate layers in a greased baking dish.
Mix together cream of mushroom soup and milk. Pour over the layers and bake at 350°F (175°C) oven for 1 hour, or until the potatoes are tender.

1 lb. lean ground beef
1 lb. Mozzarella, grated
1 pt. ricotta (low fat)
2 scallions, sliced
2 tbsp. basil
1 tbsp. salt
1 lb. manicotti noodles
Jar of spaghetti sauce
9 x 13 inch baking dish (or larger dish)
Brown meat; season with basil and salt. Drain well; let cool. Combine meat, grated Mozzarella, ricotta, scallions. Stuffing should be very heavy. Cook manicotti according to package MINUS 1/3 of the suggested time; manicotti should be a little stiff. Stuff each manicotti. If noodle tears, just press it into stuffing and lay torn side down in pan.
Pour small amount of sauce in bottom of baking dish. Place stuffed noodles in dish, cover with sauce and crumbled stuffing mix if there is any left over. Bake at 350 degrees for approximately 40 minutes. Freezes and reheats well.

Tortilla-Black Bean Casserole
Prep: 25 minutes
Bake: 30 minutes
Ingredients
* 2 cups chopped onion (2 large)
* 1-1/2 cups chopped green sweet pepper (2 medium)
* 1 14-1/2-ounce can tomatoes, cut up
* 3/4 cup bottled picante sauce or green salsa
* 2 teaspoons ground cumin
* 2 cloves garlic, minced
* 2 15-ounce cans black beans and/or red kidney beans, rinsed and drained
* 12 6-inch corn tortillas
* 8 ounces reduced-fat Monterey Jack cheese, shredded (2 cups)
* 2 medium tomatoes, chopped (optional)
* 2 cups shredded lettuce (optional)
* Sliced green onions (optional)
* Sliced pitted ripe olives (optional)
* 1/2 cup light dairy sour cream or plain low-fat yogurt (optional)
Directions
1. In a large skillet combine onion, sweet pepper, undrained tomatoes, picante sauce, cumin, and garlic. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Stir in beans.
2. Spread one-third of the bean mixture over the bottom of a 3-quart rectangular baking dish. Top with six of the tortillas, overlapping as necessary, and 1 cup of the cheese. Add another one-third of the bean mixture; top with remaining 6 tortillas and remaining bean mixture.
3. Bake, covered, in a 350 degrees F oven for 30 to 35 minutes or until heated through. Sprinkle with remaining cheese. Let stand 10 minutes.
4. If desired, top with chopped tomato, shredded lettuce, green onions, and olives, and serve with sour cream.

If you do a chunky veg casserole base, you can split it 2 or three ways (depending on quantity and add chicken, beef, lamb, pork or sausages so that you can have a variety. Cheap, warming and nutritious! Enjoy
