actually they are not stale bread, the moisture is actually cooked out of them,

They are stale bread that has been fried or baked with butter or other grease.

It is airtight:
1. To keep bugs out.
2. To keep the oil from leaking onto the cardboard box.

The croutons are made from stale bread but they are then seasoned and toasted in oil that would go rancid if not sealed airtight.

Croutons aren't stale bread. They have the moisture cooked out of them so they are crunchy bread, much like melba toast. If you make homemade croutons (bread chunks, drizzled with oil and spices) you will notice they go "stale" after a few days if left out.

The ones that I purchased; came in an airtight bag.
You can put them in a 350 oven for a few minutes; until they dry out a little. Let them cool and check one out. You can do cereal the same way. Keep an eye on them so you won't burn them. Turn the heat down if you think that might be too hot.
