Here is a good recipe for canned shrimp which uses rice:
Spanish rice with Shrimp
Ingredients
1 tablespoon olive oil
1 cup chopped onion
2 garlic cloves, minced
5 cups chopped plum tomato (about 7 tomatoes)
1 cup chopped green bell pepper
1/2 cup chopped celery
2 cups shrimp liquid (Note: Use the liquid from the canned shrimp. Measure it, and add the minimum amount of water needed to get o 2 cups.)
1 cup uncooked medium-grain rice
1/2 teaspoon salt
1 pinch saffron or dried basil, optional
1 pound (about 6 cans) cooked shrimp, peeled and deveined
Preparation
Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic; sauté 4 minutes. Add tomato, pepper, and celery; sauté 6 minutes.
Remove shrimp from cans, *being careful to save the liquid in the cans for the recipe*!!
Stir in shrimp can liquid, rice, saffron or basil, and salt, and bring to a boil. Cover, reduce heat, and simmer for 15 minutes.
Add shrimp; Mix well, and cook less than 1 minute, just until shrimp are heated through.
Yield
4 servings (serving size: 1 3/4 cups)

Here is another, easy recipe if you have a rice cooker:
RICE COOKER JAMBALAYA
1 1/2 c. uncooked rice
1 lb. cooked shrimp, shelled & deveined (about 6 cans)
1/2 stick butter, melted
1 lg. onion
1 c. bell pepper
3 ribs celery
2 tsp. Cajun Seasoning such as Emeril's or Tony Chachere's. If unavailable, use 1 tsp chili powder, 1/2 tsp thyme, 1/8 tsp ground allspice, and 1/4 tsp cayenne pepper.
1 can (14 to 15 oz) beef or chicken broth
1 can (14 to 15 oz) liquid from canned shrimp...add water if necessary, to get this amount of liquid.
2 tsp. black pepper
1 tsp. ground paprika
2 tsp. garlic powder
1-2 tsp. cayenne pepper
1 tsp. seasoning salt such as Mrs Dash, Old Bay, or Accent. If budget is a concern, you can use generic seasoning salt.
Remove shrimp from cans, *being careful to save the canning liquid for the recipe*.
Combine all ingredients except shrimp in the rice cooker and cook on regular cycle.
When rice is done, add shrimp. Mix very well and close rice cooker. Leave on warm cycle for 1 to 3 minutes or until shrimp are heated through, then serve.

Here are some other quick ideas:
Stir fry some frozen veggies. Add shrimp to the cooked stir-fry at the end, mix to heat shrimp through. Serve the stir-fry & shrimp with cooked rice.
Serve as a shrimp cocktail, on a bed of lettuce, with "cocktail suace" : a mixture of tomato ketchup and mayonnaise, optionally a bit of horseradish too.
Mix with "seafood mayonnaise" (which is mayonnaise that has some seasonings or a bit of cocktail sauce added), and serve chilled inside half an avocado. This is called "avocado ritz".
Drain shrimp, mix with an Italian or vinaigrette salad dressing, then add the shrimp & dressing to a simple mixed salad and call it seafood salad.
Pan -fry fillets of fish in a little oil with some garlic & thyme, or seafood seasoning such as Old Bay. Add shrimp at the end, heat through, and serve fish & shrimp on rice.
Saute' (pan-fry) tomatoes and sliced onions until it becomes a sauce...with a bit of basil or oregano if desired.
Add shrimps, heat through, and serve on pasta.
Mix with mayonnaise and chopped celery and green onions, then serve on rye or pumpernickel bread. Call it fishmonger club sandwich.

My dad would use canned shrimp in salads and also in spaghetti...both were AWESOME. If that doesn't tickle your fancy, just watch Forest Gump at the part where Bubba lists all those different ideas for shrimp.

Here's one for Shrimp Dip:
8 oz. softened cream cheese
8 oz. sour cream
1 pkg. zesty Italian dressing mix
1 small can of broken shrimp, rinsed and drained
(you can rinse and drain yours and chop it up finer if you want)
Rinse and drain shrimp and pat dry with a paper towel. Mix sour cream and softened cream cheese well. Add other ingredients. Chill and serve with crackers or Frito's corn chips.
