When you walk through looking at what is going on keep in mind these things: What contrasts are there? Color, age, objects, shadows. What would this look like from a different point of view? That of a child, behind the counter, telephoto lens, wide angle lens, on a ladder, roof or truck bed.
What characteristics of the person(s) appeal to you? Are the rugged looking, fair skinned, age differences.
These are a few things that you will learn to visualize quickly as time goes on.
If you are shooting digital or film be sure to have your camera set up to shoot at an average light level for the area and lock your focus if you plan on grabbing quick shots without giving the subject a chance to change character or position which will cause you to lose your wanted pose.
Be respectfull and offer prints (be sure to deliver, you never know who you are photographing, they may be a meal ticket or more).
Do not take photos of those who do not want their picture taken. You can talk to them and try to change their mind but do not argue nor photograph them behind their back once they have told you not to.
If you are looking to do this for a living or extra income some day have a business card and leave it with those you talk to, even the ones who do not want to be photographed. Have pencil and paper to write down names and phone numbers. You never know who you will meet that may give you a hand latter on.

Here are about 50,000 ideas: http://www.flickr.com/search/?w=all&q=flea+market&m=text

Personally, I like the displays that are crammed full or colorful, tacky things. They make bright images. Then again, there are some pretty colorful, tacky people at flea markets, too. Try to take a shot of a guy wearing a wife beater t-shirt, walking with his arm around his "woman," wearing mirror sunglasses that show a reflection of another woman, as if he's always looking... It would only help if he had greasy hair.
