I don't know what the characters are called, but in the business its called "garde manger"
pronounced "guard mahnjay".

Its a special area of food preparation and display. Folks do wonderful things with food! There are restaurant shows which have contests for this area. One of the requirements is EVERYTHING MUST BE EDIBLE!

THE MOST amazing piece I ever saw was at the Hotel and Restaurant show in New York:

The garde manger work was two suckling pigs, sitting in chairs, completely dressed like people - playing chess! The chess pieces were shaped like people!
EVERYTHING could be eaten! It was magnificent!

I've seen something similar to the carved fruits and vegetables on Martha Stewart they didn't have a name for them I remember making something like them with long neck squash. I transformed them into swans the eyes were black eyed peas.

I'm not sure I follow your question. They are various colored bell peppers except for the orange and the blueberry and have eyes added to them to make them into characters.
