Booze is not a truth serum, if thats what you mean. It does help to dampen a persons inhibitions.
I doubt he's lying to you in this state, but he may be embellishing his feelings a bit. If he feels so insecure that he cannot say something unless he's drunk, that's not a harbinger of a good relationship. Sounds more like he's horny.
You should find a private space and some free time, to be alone with him, sober, and talk this through.

When a person is drunk they are not aware of what they speak and what they speak mostly come from the Sub-Conscious mind or not.
Drinking is not good for health of not only a man but also his future off-spring.
If you can make him stop drinking nothing better than that, try to distract him from drinking, also try to find what his problem is that he has to drink.
Tell him taht if he really love you he must stop drinking, if he gives it up then his Love is true.

If you really care and sounds as if you are you talk to him drinking is not the answer tell him what he says to you when he drinks but don't allow drinking to be that source it could become a bad habit. If he can't be open sober what do you need him for a junks worth nothing.

I think he may be telling the truth when drunk. Do you ever bring it up when hes not drinking? Like say do you remember what you said last night? If not try it, it may give him the opportunity to tell you when hes sober

I think people are more likely to speak their mind when they're drunk, because they don't have as much self-control. However, alcoholics are some of the best liars out there, so don't ever ASSUME a drunk is telling the truth. (Especially a habitual drunk, and don't assume they're telling the truth even when they're sober.)

People let down their guard when intoxicated. And they say anything that pops into their minds. I just hope he doesn't have a drinking problem. You need to talk to him when hes sober, and tell him how you feel and may if he feels the same he will loosen up and talk.

take a weekend without interruptions and think about nothing but him. think about how you feel, if you like his hair, how he smells when he's been working hard, how he looks when he's dressed up, how he looks in grubby clothes.
think about everything that is good and bad about him and then ask yourself " is this the man for me?"
If you feel that you've found your prince charming or your knight in shinning armor then tell him that you need him to stop drinking. Moderation in all things. tell him how you feel about him and that you want to spend a lot more time with him but only if he quites with the booze.
If he quites, he's the man for you. If not, then thanks but no thanks.
