I am wanting to explore robotics, and am wondering what would be an easy starter project in order to build my skills. I was an engineering student, but I decided to give that up because I wanted to actually learn and explore the engineering field instead of just read books about it and do math problems. This project shouldn't be too expensive, and should provide for future expandability. Any ideas?

Depends if you know how to program or not. If so, you should get a microcontroller such as 68HC11. It's a very simple board and can be programmed with C or assembly. If you're a really really beginner I suggest you look into LEGO MINDSTORMS NXT, which is a robot kit from lego, requires no programming experience and has various sensors, it's about 250$. A robotics kit for 250$ is a steal!

Alternatives to Lego are the Robo-box series from INex Global. They run $100 ~ $130 and have more future expandability.
Or you can build from scratch easy enough. The PIC Axe series are great for that kind of thing. Cheap and easy to use.

buddy...i feel a good start for you will b a line tracer...the most basic robot...and to do that you dont require much cost also..i prefer you to start building it from scratch as you will get the complete feel abt it...you can also go for future expansion by incorporating differnt aspects in the line tracer...i have done it before..but i didnt use any programming...simply using digital and analog circuits...But its better you master programming also...gud luck
