this sounds weird, but sloppy joes from scratch in a slow cooker are AMAZING, and super simple. Sometimes, the simplest foods are the best. Get some awesome buns, roast some redskin potatoes (cut up in little cubes, toss with olive oil and your favorite spice mix, spread on a baking sheet and roast for about 35 minutes, stirring once. ) The sloppy joes are in the Good Housekeeping Book of Slow Cooker recipes and your house will smell soooo good.

Easy Crockpot Beef Roast
1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix
Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).
It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove. Doesn't taste AT ALL like salad dressing!!!

An awesome easy meal to prepare for that size family is a good roast with small halved potatoes, carrots, and some onions if you like in a crockpot. Start it in the morning and let it cook on medium till about 4:00 or so. Throw some easy bake bisquits in the oven before the meal and i,ll guarantee you will get a lot of compliments. Trust me. It,s one of my favorites and with a crockpotted meal you will not go wrong.

This is my pot roast:
1 pot roast (your choice of poundage
2 cans vegetable broth
1 can tomato sauce
carrots
celery
1 med onion
1 envelope of french onion soup
Horseraddish sauce
What you do:
1. Cut the onion to the size you want (chunks, minced, etc). But in bowl and set aside.
2. Wash the carrots, remove the outside skin, and cut 2-3 to width of crock pot and cut the rest to the size you want.
3. Wash the celery, remove head and bottom, and cut 2-3 to width of crock pot and cut the rest to the size you want.
4. If you want potatoes, simply wash and peel and cut to the suze.
5. Put ALL vegetables at the bottom of the crock pot--you want circulation on that end of the meat.
6. Put roast in and smear horseraddish sauce over the sides. You won't taste it, but it will keep in the juices.
7. Dump in the broth and tomato sauce. If you're going to leave it in for more than 8 hours, put in an extra cup of water.
8. Dump in french onion mix and sprinkle garlic, onion powder, and a dash of pepper. You can use garlic salt if you wish.
Cover and have fun.
It smells delicious and will fall apart on your plate.Serve with some rolls and maybe some wild brown rice, and you've got yourself a winner!
You can also add--fresh tomato, mushrooms, etc if you like. It depends on your taste buds.

I'm a dumper if you can't tell. I don't measure much.

I made this beef shank stew from Emeril's show. It was absolutely fabulous. The only thing that I did differently (and it worked well) is that I tripled the mushrooms.
