Mold. Or watch the expiration date.

Sour cream is fine to eat as long as it hasn’t grown anything -- like blue or green mold. I just bought a carton of sour cream about two weeks ago and the expiration date is three weeks from now. If I had not opened the sour cream I’d bet it would be fine for several weeks -- at least -- after the expiration. Once opened, however, it would spoil faster.

Here is a little tip I learned a long time ago: When you are through w/the sour cream,take a spoon & smooth it all down before refrigerating each time & it keeps it from having that water forming at the top.

Check the expiration date first. Then, if anything in the tub smells or looks funny, dump the sour cream down the drain. I'm not that much of an expert on spoiled food, though. Don't forget to use the tub as a storage container or plant pot ;-).

Check the expiration date and look for moldy spots... I use expired sour cream a few days after expiration but, not much maybe a couple days.. If it's not too watery or moldy...Good luck.. When in doubt throw it out !!!

after you have poured out the excess water
and removed the green slime buildup
and skimed it for any other contaminents
then Serve it to your mother in law. She knows whats what when it comes to your cooking so if she approves of it then you can assume it is safe to eat. Momma always said milk dont go bad,it goes into cornnbread.

Other than the expiration date, it kind of separates and smells more sour.

If its got a strange color other than white and a weird smell.

if its passed the expiry date or if its not it will smell bad and may change color or have specks of stuff in it (thats bacteria)

It shouldn't smell like anything when it's good. If it's gone bad, it'll REEK. Trust me!
