Is there a way to preserve mushrooms to keep them from rotting? Is it okay to freeze them?

Raw or cooked, mushreooms are fragile and deteriorate quickly. Handle them with care and refrigerate them as soon as possible. Store fresh mushrooms unwashed in a non-airtight container, preferably a paper bag, to allow them to breathe. At the very least, poke holes in the plastic packaging, as poor air circulation promotes rotting and the growth of Clostridium botulinum, a bacterium naturally found in soil, which proliferates in damp oxygen-poor envieonments and can cause serious food poisoning ( botulism). Mushrooms keep for about a week in the refrigerator. They freeze well; simple slice them and place them carefully in a freezer bag. Blanching makes them tough and is unneccessary if you intend to freeze them for less than 3 months. If you plan to freeze mushrooms for a longer period, sprinkle them with lemon juice diluted with water and then blanch them for 2 .5 minutes. Use them unthawed. You can also dry mushrooms; they lose up to 90% of their initial volume and keep for up to a year.
