Chicken need to fry at a fairly high temp. Don't fry on a lower temp - cause that's what makes chicken greasy. You will need to fry on high - then when the chicken is brown turn it down a little - cover it and let it cook all the way through

NEVER cover a deep fryer while cooking, the moisture from the food can condense on the lid and when you remove it will fall into the oil and splatter.
As said, stoves are different, use a thermometer. They don't cost much and are necessary for candy making too. Just be sure to get a candy/frying thermometer not a meat thermometer. That might seem obvious but I know at least two people who made that mistake.

Use a thermometer to measure the oil temperature when deep-frying. It's very difficult to tell temperature by setting. You can be low or too high, which is dangerous.
Once you have a thermometer, I'd start out at med-high.

A bit above medium has always worked for me.
I.e. my stove knobs are marked low 2-9 high. I set it at 7.
