Breakfast casserole---- 12 servings
INGREDIENTS
1 pound bacon
1/4 cup diced onion
1/4 cup diced green bell pepper
3 cups shredded Cheddar cheese
8 eggs
2 cups milk
1 (16 ounce) package frozen hash brown potatoes, thawed
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch casserole dish.
In a large bowl beat together eggs and milk. Mix in cheese, bacon, onion and green pepper. Stir in the thawed hash browns. Pour mixture into prepared casserole.
Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes until eggs have set.
Apple raisin french toast casserole----- 12 servings
INGREDIENTS
1 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
3 apples - peeled, cored and sliced
1/2 cup raisins
1 (1 pound) loaf French baguette, cut into 1 inch slices
6 eggs, lightly beaten
1 1/2 cups milk
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
DIRECTIONS
Grease a 9x13 inch baking dish. In a large bowl, mix together brown sugar and 1 teaspoon cinnamon. Mix in melted butter. Stir in apples and raisins until evenly coated. Pour into prepared pan. Arrange bread slices in an even layer over apples.
In the bowl, whisk together eggs, milk, vanilla and 2 teaspoons cinnamon. Pour over bread, making sure every slice is fully soaked. Cover with aluminum foil, and refrigerated overnight.
Preheat oven to 375 degrees F (190 degrees C). Remove dish from refrigerator while the oven is heating. Bake covered for 40 minutes. Remove cover, and bake 5 minutes. Let stand 5 minutes before serving.
Cheesy ham & hashbrown casserole----12 servings
INGREDIENTS
1 (32 ounce) package frozen hash brown potatoes
8 ounces cooked, diced ham
2 (10.75 ounce) cans condensed cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp Cheddar cheese
1 1/2 cups grated Parmesan cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

Strawberry Breakfast Bread
2 cans crescent rolls
2 pkg (8 oz) cream cheese, softened
1 pkg (16 oz) Albertson's frozen sliced strawberries, thawed and drained
1 egg, separated
1/2 to 3/4 cup sugar (the strawberries already have sugar added)
1 tsp. sugar
Topping:
1/2 cup chopped nuts (optional)
Sprinkle of sugar
Sprinkle of cinnamon
Preheat oven to 350 degrees. Grease or spray a 9 x 13 pan. Open and unroll one can of the rolls and press into the bottom of the pan. Cream the cream cheese, sugar, egg yolk and vanilla. Open and unroll the second can of rolls and place over the filling. Brush the top with the egg white. Sprinkle on some sugar and cinnamon. Bake for 30 - 35 minutes.

Breakfast pizza! It is pretty simple and not too much money.
Crust is biscuit (I get the refrigerated kind flatten it on a pizza pan or cookie sheet)
Sauce is gravy(the kind for biscuits and gravy)
Topping are what ever you want, eggs, bacon, sausage, cheese, onions, mushrooms, green chili, black olives are just some ideas. Anyway, it is a great recipe that can be changed up however you want and it is different! Hope this helps, enjoy:)

I make a very easy but, impressive sausage/bread braid...
It uses pillsbury cresant dough, bulk rolled sausage, cream chease and some green pepper/onion... Take the dough and unroll it onto a baking sheet seal up the perforations so it's a rectangle.. and roll it into a thin rectangle... Put in fridge to keep cold. Cook sausage, 1/2 green pepper/onion and add 1/2 block of cream cheese. Let cool... Put in middle of rectangle leaving room along the sides/edges of rectangle... With a knife cut 1/2 inch strips and "braid" over the sausage mixture.. It's very, very easy... and looks so pretty... Brush with egg wash and bake until golden brown ! I know this sounds hard but its really not.. it's takes minimal effort and looks fantastic... don't worry if the strips break just reattach and layer over sausage... good luck

Get a platter of mini muffins,sliced fruit breads,bagels & cream cheeses,Danish,fruit bowl or french toast.Really easy casserole is 1# frozen french fries,6 eggs(beaten in a bowl with salt&pepper),1 cup chopped green onions,grated cheese(your preference and amount).Layer as written and bake at 350 for about 45 mins.Til bubbly and golden.Hope this helps...

Breakfast fruit salad
2 cups cubed cantaloupe
2 large apples apples - chopped
1 cup green grapes
1 large banana - sliced into coins
1/2 cup low-fat vanilla or lemon yogurt
1 tablespoon orange juice concentrate
1 teaspoon fresh lemon juice
In a large serving bowl, toss all of the fruit together with the lemon juice.
In a small bowl or cup, mix the yogurt with the orange juice concentrate. Drizzle over fruit.
Breakfast Quesdillas
8 flour tortillas
2 tablespoons oil
3 cups cheddar cheese -- shredded
16 ham slices -- thinly sliced
1 cup green onions -- thinly sliced
1 cup sour cream
1 cup salsa
Optional: sliced jalapeno peppers
Heat a large frying pan. Brush tortilla with oil on one side. Place tortilla, oiled side down, in the pan. Add 1/2 cup cheese, 2 slices of ham and some green onions.
Cover with another tortilla, oiled side up. Cook on medium heat until tortilla is crisp on the bottom, turn over and cook until cheese is melted. Repeat as needed. Cut into wedges and serve with sour cream and salsa.

Get a box or those cheesy scalloped potatoes and make them. Brown a roll of sausage. Mix the sasage and potatoes together and bake until the top is brown and crispy. It's so good!

Cinnamon and Sugar Biscotti. We make it as often as we can. It is so yummy and lite. But great with coffee. And if everyone else is bringing heavier breakfast items this will be a nice difference. GREAT with coffee.

french toast casserole, here are some websites, or you could just look any where in google i guess, it's really easy, all you do is cut day old french bread into cubes, but them in a baking dish, pour over the egg mixture and bake, really good

My mother in-law always makes this dish you put bread on the bottom with ham then eggs, cheese and then top with corn flakes and bake it sound weird but is good.
