For all those intense flavours and the delicious texture of the meal I would go with a South African Cabernet, or an Australian Chiraz. Stay with the reds, whites will be lost in the flavours.

Something that may go better with this meal may be a good ale. Something a bit darker with an earthy hop. A stout or a Brown ale.

I made some gumbo the other night. Sounds like a good recipe.

With a spicy dish like this I would go with a slightly sweet white, perhaps reisling or gewurtraimer, or a sparkling wine!

With chicken a red wine would go with the gumbo since I'm assuming the sauce it red as well. Beer would also go well with gumbo.

Perhaps I will be in the minority, but I think a spiced wine served punch style or sangria would be really nice with this.

Spicy - sounds good ;-)

I like Chianti for spicy food, personal preference.

Ruffino makes some really good Chianti wines.
