My boyfriend's friend, husband and 1yr old son are coming over this Sunday and I need to make something for lunch. I don't want to do anything too complicated and think lunchmeat sandwiches are to blah. Any ideas?

Since they have a little one, why not do spaghetti with salad and bread? The baby can eat spaghetti and bread, and it's a fast easy meal.

A plain old sandwich can be lived up by adding some exotic ingredients, grilling it, and calling it a panini! It's still uncomplicated and easy, but very impressive. Experiment with different meats, cheese, and vegetables; or use the same things and just grill 'em up. Maybe serve it with some homemade oven fries, they're really easy but usually impress. (Slice the potatoes like fries, coat with olive oil and some seasoning, and bake at 400 for 30-45 min, depending how crispy you want them.)

My husband/children LOVE sloppy joe pockets.... It's easy for them to hold and eat without the mess of sloppy joes..

Pillsbury Grands Bisquits... You can buy already seasoned manwhich in the meat dept or frozen foods dept. or make your own seasoned meat... Shredded cheddar cheese or sliced american cheese.... Take the GRANDS and place on a baking sheet with parchment or silpat or wax paper or spray with cooking spray.... Roll the circles thinner/bigger but not too thin... Put about 1 tablespoon of filling into each circle and top with cheese... Fold over and seal with fork/egg wash.. Bake until golden brown... Serve. good with soup/salad. Freeze well and reheat in microwave.. Can be filled with just about anything.... I like tuna melts...

Do a taco bar. All the ingredients are usually pretty cheap and easy to prep. And everyone can make theirs just the way they like.

Why don't you do a brunch. Bagels, cream cheeses, eggs bacon, sausage, muffins etc. and a spinich quiche.

Get a takeout order. Something like Jimmy Johns, Browns chicken, etc.. That is simple but it is also good.
