I have a hard time finding wax beans. I like having them at Thanksgiving and I do not like the canned or frozen. I like the fresh produce kind. I found them recently and I wanted to cook them now and freeze them after and then take them out and use for Thanksgiving. Is this ok? As I know that it is better obviously fresher to have them at the time when you cook them but as it is hard to find and I found them now, I was thinking of cooking them and freezing them until Thanksgiving because I know they would not be any good to freeze uncooked.

If i don't blanch them, can I just freeze the uncooked package and then cook them for Thanksgiving?

When putting the beans into ice water to stop the boiling and use a strainer, do you drain beans as water is boiling and pour into the ice water?
