The possibilities are endless.

For example, there have been many articles and sites devoted to undergraduate design projects of all types.

For civil engineering, I can think of several off the top of my head:

1. As a boy scout I built a simple suspension bridge with rope and lashings: One big rope for the walking surface, two thinner ropes for the hand rails.

But we did it in an ad hoc manner - the way previous troops had done it. How about doing it with a detailed structural analysis and comparing the results of you analysis with reality?

2. Countless people have built domes of various sorts at various scales. There are now a number of significant different doming technologies to choose from, as well as a variety of materials.

3. If you prefer working in concrete, how about reprising a classic - a ferroconcrete boat?

If you want something more productive and less toy-like, there are options too:

1. Join Habitat for Humanity in building a house

2. Device and build piece of playground equipment that kids can actually use (i.e. meeting all safety criteria, etc.)

Or you can just do an analysis of an existing structure and compare theory with practice.
