Thanks everyone....I can't choose a best answer because they all sound great...don't know which one to try yet.

This is a tomato base version:
2 lbs lean ground beef
2 T A-1 sauce
2 t salt
1 cup bread crumbs
2 eggs, beaten
3/4 cup of milk
1/2 t dry mustard
1/4 cup bell pepper chopped fine
3 T parsley
1 medium onion chopped fine
1/4 cup grated carrot

SAUCE: 2 T A-1 sauce mixed with 8 oz tomato sauce

Mix all ingredients together except the sauce....Put half the sauce in the meatloaf mixture and the other half on top of the meatloaf once it is in the loaf pan. Bake at 400 for 1 hour.

Here's my favorite...it has a nice kick to it! I got it off the Food Network. It's definitely different than the boring traditional meatloaf!

Ingredients:
Meatloaf:
2 pounds ground turkey (preferably dark meat only)
2 eggs
3 ounces tomato paste (1/2 of 1 small can, reserving rest for the sauce)
1 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper
1/2 cup plain bread crumbs
1 small onion, finely chopped
2 cloves garlic, pressed

Red Pepper Sauce:
3 ounces tomato paste (from reserved 1/2 can)
1 small onion, roughly chopped
1 clove garlic, peeled
1 small red pepper, seeded, cored, and roughly chopped
1 cup water
1/2 teaspoon salt
15 grinds black pepper


Meatloaf:
Preheat oven to 350 degrees F.
In a large mixing bowl, mix together all the ingredients for the meatloaf and work together completely by hand until all ingredients are evenly distributed and the mixture is uniform. Place meat mixture into a 9 by 13-inch baking dish and shape into a loaf about 11 inches long and 4 inches wide. It is important to form it like this so that it cooks evenly throughout. The loaf should be in the middle of the pan with room on both sides for the sauce to pool.

Red Pepper Sauce:
Place all ingredients in a blender or food processor and puree until smooth. Cover the meatloaf with the sauce and allow excess sauce to pool around the meatloaf. Cover pan with aluminum foil but avoid contact with meat loaf by leaving at least a couple inches of space between the top of the meatloaf and the foil. Bake for 45 minutes, then uncover and bake 45 minutes longer. Let rest for 15 minutes before cutting and serving.

This is my version and everyone loves it, it's the sauce that makes it so good, enjoy!

Moms Sweet & Sour Meatloaf

Sauce:
2 small cans tomato sauce
1/4 cup worchestershire sauce
1/2 onion chopped
1 tablespoon dried parsley
1/2 cup brown sugar

Mix all sauce ingredients together in bowl, set aside.

Ingredients (Meatloaf):
2 pounds ground beef
1/2 chopped onion
1 egg, beaten
1/2 cup or more if needed, quick oatmeal (not instant)
1 teaspoon garlic salt

In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.

Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.

When I make a meatloaf - it really is a meatloaf. Not a lot of filler. I have been told by many individuals that this recipe is the best they have ever eaten. Here is my recipe.

1-2 lbs of ground beef
1 package of onion soup mix
2 eggs
1/4 c. plain bread crumbs
4 slices of bacon
salt & pepper to taste

In large bowl, put in ground beef. Salt and pepper. Then add package of onion soup mix. Then add eggs. Mix well. If mixture is too moist, add some of the plain bread crumbs. You want your meat mixture to be firm enough to form a nice loaf. Mix well. Re-salt and pepper. Form meat into loaf. Place meat into loaf pan. Take bacon strips and lay on top of the meat loaf. Place in oven at 350 degrees and bake approximately 1 - 1/2 hours (depending on how much meat you used). Remove from oven. Remove loaf from pan. Place on platter or plate, cut and serve. I perfer my meatloaf sliced thin, but others may perfer it sliced thick.

Microwave Meatloaf Very moist and full of flavor. 1- 1 1/2 lb ground beef 1 medium onion chopped 2 stalks celery chopped 1 egg 1/2 cup breadcrumbs 1/4 cup water 1/2 tsp salt 1/4 tsp pepper 3/4 tsp Granulated Garlic powder 1 tsp Keene's dry mustard 1 tsp dry parsley flakes(opt) mix all ingredients in a bowl greased Glass Pyrex pie plate for microwave is needed unbreakable special drinking glass to put in center of pie plate to improvise a tube pan. Place mixture of meat around the glass in the pie plate If you do not have glass just hand shape two meat loaves in the microwave safe pan for baking Cover with a piece of wax paper to prevent splashing the walls of the microwave Bake for 8 minutes. Spread surface of meatloaf with 1/4 cup of ketchup gives great flavor Cover again with wax paper and bake 8 more minutes and your meatloaf should be done. Leave in microwave for 5 more minutes to set Remove and slice to serve.

3 cloves garlic, crushed
1 1/4 teaspoons ground sage
1 1/4 teaspoons salt
1 teaspoon ground black pepper
3/4 cup milk
2 large eggs
1/4 cup Worchestershire sauce
2/3 cup bread crumbs
4 slices bacon
1/4 cup tomato ketchup
2 tablespoons firmly packed brown sugar
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon ground black pepper

1. Combine the first 8 ingredients in a medium bowl.
2. In a large bowl, combine milk ,eggs and Worcestershire sauce. Mix in beef mixture. Add bread crumbs.
3. Grease a large sheet of aluminum foil, place bacon on foil. Mold mixture over bacon. Refrigerate 2 hours, or over night.
4. Preheat oven to 350°F (175°C).
5. Place meatloaf on a cookie sheet and bake for 1 hour.
6. Combine ketchup, brown sugar, salt, mustard and pepper. Open foil , drain any juice. Spoon ketchup mixture over meatloaf and bake, uncovered, an additional 30 minutes. Serve immediately.

Makes 6 servings.

Here's mine:

MEATLOAF
● 1-1/2 lbs gr. beef
● 1 med. onion (grated)
● bread crumbs (preferably Pepperidge Herb Stuffing Mix)
● milk to soften stuffing mix
● 1 egg
● ¼ to ½ cup chopped gr. pepper
● parsley
● salt & pepper
● 1 med (16 oz?) can tomato sauce
● 1 med. onion (sliced thin)
● gr. pepper strips

- Pre-heat oven to 350 deg. (175 C)
- Put stuffing mix in sm. bowl or measuring cup. Pour just enough milk to cover and put aside
- In med. bowl mix all remaining ingredients but the last 3
- Squeeze milk out of stuffing mixture and add to meat mixture and mix well.
- Shape meat mixture in loaf shape and put in baking dish. (dish should be larger than meat to allow room for sauce and juices from cooking.)
- Place sliced onions and gr. pepper strips across the top
- Pour tomato sauce over all

Bake for about 1-1/2 hours, occasionally spooning juices over meat. Sauce will mix with juices from meat to make a nice sauce. The meatloaf will be very moist. Serve with homemade macaroni and cheese, or whipped potatoes and a green vegetable and/or salad.

Go to Kraftfoodandfamily.com...There they have 5 or six variations of meatloaf recipies using stove top stuffing mix INSTEAD of bread crumbs/cracker crumbs for the meatloaf. It's really quite good and moist. The best meatloaf !

***********STUFFED MEATLOAF
2 lbs. ground beef
Beef Stove Top stuffing mix
1/2 c. finely chopped green pepper
1/2 c. celery, chopped
1 med. onion, chopped
1/2 tsp. garlic salt
1 tsp. salt
1/2 c. grated carrots, optional
2 eggs, beaten
3/4 c. bread crumbs
Prepare Stove Top stuffing according to box directions; set aside. Crumble ground beef in large mixing bowl; add all other ingredients except stuffing. Mix well using hands.
Place on sheet of foil big enough to wrap meatloaf for baking. Flatten meat mixture out; add stuffing mix on top. Using edge of foil nearest you, begin to roll meat mixture and press together all edges. Now completely wrap loaf with foil. Place in baking dish. Bake at 350 degrees for 2 hours. Remove from oven; let stand 5 minutes before serving.
