Buttermilk Baked Chicken:
Serves 4 | Prep time: 10 minutes| Total time: 50 minutes
Served with slaw or potato salad, this chicken dinner will feel like an indoor picnic. Any leftover chicken will make a great school lunch.
Preheat oven to 400°. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.
In a large bowl, stir together buttermilk, hot-pepper sauce, ¾ teaspoon salt, and ½ teaspoon pepper. In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper.
Place the chicken in the buttermilk mixture, turning to coat evenly. Working with one piece at a time, remove chicken from liquid, letting excess drip back into bowl; dredge in the breadcrumb mixture, turning to coat evenly. Place coated chicken pieces on prepared baking sheet.
Bake until chicken is golden brown, about 35 minutes.

1 cup buttermilk

BUTTERMILK BAKED CHICKEN
--Southern Living 2000 Recipe Hall of Fame
1/4 cup butter or margarine
4 bone-in chicken breast halves
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups buttermilk, divided
3/4 cup all-purpose flour
1 (10 3/4-oz) can cream of mushroom or chicken soup, undiluted
Garnish: chopped fresh parsley
Melt butter in a lightly greased 13- x 9-inch baking dish in a 425 degrees oven.
Sprinkle chicken with salt and pepper. Dip chicken in 1/2 cup buttermilk, and dredge in flour.
Arrange chicken, breast side down, in baking dish.
Bake at 425° for 25 minutes. Turn chicken, and bake 10 more minutes.
Stir together remaining 1 cup buttermilk and cream of mushroom soup; pour over chicken, and bake 10 more minutes, shielding chicken with aluminum foil to prevent excessive browning, if necessary. Drizzle gravy over chicken and Mashed Potatoes. Garnish, if desired.

350 degrees F for 45-60 minutes. Cover them when baking with a lid or foil. When fork is inserted it should go smoothly to the bone when done. (My hubby fried chicken dipped in buttermilk last night, he wished he would have marinated it in the buttermilk.) (He cooks for me at least once a week just because.)

bake them on a lower temp: 350 or they will dry out. Bake them 25 minutes per pound. Let them set for 5 or 10 minutes after you take them out of the oven

fry them in shallow veg oil first for 3-4 mins each side to crisp the skins up,then bake on a drip tray in a pre heated oven at 200C until the juices run clear when u poke them with a skewer.mmmmmm wots ur address and can i come for tea please????????? yum
