I'll try and get in quick before loads of people tell you to fry pre-cooked rice.
The best way is to fry the uncooked rice in some ground nut oilfor a minute . then add twice its volume of hot water or stock. Season to taste. Simmer on lowest setting for 15 mins with a tight lid on.
Then fry in a clean wok with a lightly beaten egg, stirring as the egg starts to cook. Sprikle with soy sauce and shake the pan periodically to dry out the rice . Finally add a little sesame oil and srve.
Toss in a few peas as you fry the rice if you like.
Frying the dry rice at the start is the key as it seals the rice and stops it releasing the starch.

Ingredients: (approximate amounts)
1 cup cooked white rice
1 carrot
1/4 cup frozen peas
1/4 cup frozen corn
1/4 block extra firm tofu (optional)
1 egg
Dash cayenne
Dash kelp powder (optional)
Salt to taste
Oil for frying
Method:
Wash, peel if you want, and dice the carrot. Grate the tofu if using.
Heat oil up in a frying pan. Add rice, carrot and tofu and stir constantly for 30 seconds. Add peas, corn and spices. Stir for another 30 seconds, making sure that rice isn't sticking to the bottom of the pan.
Add egg and stir rapidly until egg is cooked. Adjust seasonings.
Serves 2
This recipe is really quick to make, and actually quite good. More filling if you use the tofu, but that is very optional. I doubt this is very authentic, (as if western chinese food is very authentic anyway!) but it is tasty. I tend to add kelp to things, because I use a miniral salt that is non iodised and kelp is very high in iodine.

How to MAKE Chinese fried rice? Use left over cooked white rice. You can use fresh cooked white rice but left over works better. With that said, here is a recipe I have used and it is good, not as good as a Chinese Restaurant, but good:
1 lean pork chop (or meat of choice about 1/4 #)
1/4 cup minced ham (optional)
1/4 cup Wesson Oil, I prefer canola
1 medium to large onion, chopped
1 medium green pepper, chopped (about 1 cup if you use frozen)
1/2 cup chopped parsley (optional)
1 clove garlic, minced (more if you like)
1 tsp salt (omit if you use soy sauce)
1/8 tsp black pepper (optional)
1/2 teaspoon ginger (optional but recommended)
3-4 cups cooked rice
4 eggs
Cut pork in long strips (juilienne) and cook with ham in 2 tbs Wesson oil until brown. Add onion, green pepper, parsley, and garlic. Cook until tender. Add remaining oil, salt (Or soy sauce) pepper, ginger, and rice; stir lightly to mix. Make a well in the center of rice and add eggs and cook until semi-solid, the egg that is. Then stir into rice while cooking over medium heat 2-3 minutes, or longer if you want it more brown.

Have some cooked rice, add it to a wok with , sesame seed oil, start frying that up , add mixed veggys. green onions, soy sauce, when its heated thoroughly, push your rice mixture to the sides, get an egg scramble it and cook it in the middle of your wok then mix all together cooking til the egg is done.

u cook rice ... depends on how many people are eating it..
and after its cooked.. close the switch and stir up the rice and let it cool down.. so the rice wont stick together..
den beat 2, 3 eggs (depends on you)
and u can put sausages peas .. whatever that u like chicken meat.. cook the egg and the meat seperately .. den put them on a plate first.. put oil and both your cooked ingredients. den add rice in and fry it .. stir it mix them all together.. after that put in salt and soy sauce.. u can add pepper if u want =)

Fried Rice with Ham
Serves 4.
3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped
4 cups cold cooked rice
¼ tsp. sesame oil
3 Tbsp. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.
In same skillet, heat remaining Tbsp. oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt and sesame oil, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.

They use a special kind of rice that you can't buy in a regular grocery store.. you have to go to an oriental grocery or order it online
