How about a nice vegetarian lasagna? Barilla has the lasagna sheets you don't have to precook. They come in a box in the pasta section. Get a good jar of pasta sauce. Pick what vegetables you like, ie.... eggplant, zucchini, tomatoes. Grill or broil the eggplant and zucchini with olive oil, salt and pepper. Get some ricotta cheese and mozzarella, and layer it altogether, cover with foil and bake at 350 for about an hour. If your friend doesn't eat cheese, there are vegan option available too. Good luck.

I love the Moosewood Restaurant Lowfat Favorites for tasty vegetarian and fish recipes. They explain exactly what you need to do, and even have pictures of the complicated stuff. They also have recommendations of which recipes go well together. If you are a novice cook, pick the simplest recipe you can find. Simple is often elegant, and more difficult to mess up.

Its easy to make no meat lasagne. Try an kit from the store and just follow the directions, dont doubt the directions follow them to the T and it will turn out. A GREAT cookbook to learn from is Good Housekeeping 1960's try Ebay for it it tends to show all the basics even no meat dishes. Good Luck!

Buy some fresh shrimp (peeled) and pan sautee in olive oil and fresh garlic. After removing from the heat, add some fresh minced parsley. Serve over spaghetti and have some freshly grated parmesan to sprinkle over it at the table. Serve with a nice salad of field greens, cherry tomatoes, black olives, scallions and a little feta cheese. For dessert, marinate some sliced strawberries in Grand Marnier and serve over vanilla ice cream.
