I'm really into the easy and quick to make salads that have quirky add ins that make them truely original..but i also really enjoy orinigal mixes other people might've came up with..Do you have anything to share?

I have a couple...

I make a killer chicken salad...sometimes I used canned chunk chicken if I don't have any left over baked chicken. I use mayo, celery, an apple, dill weed and salt n' pepper to taste. Slap it between two slices of bread or on a bed of iceberg lettuce...YUM!

The other is what I like to call my cranberry/walnut freeway salad. I use a bag of mixed field greens (the stuff that looks like it can be found on the side of the freeway - hence the name), dried cranberries, candied walnuts, bluecheese crumbles and a rasberry vinaigrette.

Sometimes I add fresh pear slivers and change the dressing to strawberry vinaigrette...YUMMMMMMY!!

Waldorf Salad

3 or 4 apples, unpeeled, cut from the core, and chopped into bite size pieces (about 3 cups)


1 tablespoon lemon juice

1/3 cup raisins

2/3 cup chopped celery

1/3 cup walnuts (optional)

1/3 cup mayonnaise

1 tablespoon sugar

Don't bother peeling the apples unless their skins are really unattractive.

Cut up 3 or 4 of them, until you get about 2-1/2 or 3 cups of chopped apples.

Sprinkle the lemon juice over the apples. The acid in the lemon juice prevents the apples from turning brown.

The raisins will taste best if you plump them first. Do this by measuring them into a cereal bowl and adding enough warm tap water to cover them completely. Allow them to sit for a few minutes, absorbing the water, and softening up. Drain them very well when you need them. I actually squeeze them to make sure they are very dry.

Chop up the celery, it should take about 2 stalks or so.

Add black walnuts .. or .. you can use regular walnuts or omit them completely if you don't have any handy.

Mix everything together in a medium sized bowl with the mayonnaise and sugar, coating all of the ingredients with the mayonnaise.

It is now ready to serve, or you can chill it overnight and serve it tomorrow instead.

This is so crunchy and chewy, it is perfect contrast for a meal which is soft, or easy to chew.

This recipe serves 6.

OK, I love this one:

Avocado, Bacon and Mango Salad.

Use one Iceberg (or similar) lettuce. Use the leaves as individual "cups" to put each persons salad into.

Slice up avocado and Mangoes and put in the lettuce cup.

Cook a generous amount of Diced Bacon and sprinkle over the top of each cup. If you like Shrimp (prawns) it tastes great in there too.

For the Dressing, Mix Fresh cream (about 1/2 cup) a few decent splashes of lemon juice and a few teaspoons of French Mustard. Mix it all together (I find it easier in a shaker) and drizzle over the salad.

This is great!! I've never had anyone not like it.

A salad that I make that my whole family enjoys is a Seafood salad.

I packet pasta (spiral, bows rigatoni etc)
1 kg Seafood Extender (I'm not sure what its called in the US)
2 Bottles thousand Island Dressing.

Cook the pasta. While its still warm add the seafood and dressing. Serve warm or cold.

You could also add some cooked prawns as well.

Everyone keeps asking me to make this for their entertaining parties - BBQs etc. Tabbouli - It is quick and so easy.
1 cup fine ground bulgar (cracked wheat) soaked in cold water for about 1/2 to 3/4 hr till softened then drain really well. Add 1.5 cups finely chopped parsley - 1 medium onion finely chopped - 1 medium tomatoe finely diced. Mix all together in large bowl. Add freshly ground salt and pepper to taste - then add fresh lemon juice and a good olive oil to make a lovely tangy flavour. It shouldn't be too oily - just enough to taste. Mix well and serve on lettuce cups. - Yummmmm!!!!

My all time favorite salad is made from......Spring mix lettuce and baby spinach to start. Top it with canned sliced mandarin oranges, sliced strawberries, crumbled blue cheese and spicy pecans. The pecans are easy. Soak them for ten minutes in water and sugar. Drain them, toss with justa pinch of cayenne pepper and bake for 10-15 min at 400.The dressing is a simple olive oil,dijon mustard, balsamic blend......To die for....ChefGuy

Romaine lettuce, raddichio, canned cannellini beans, cooked italian sausage, olives, roasted red peppers, sliced red onions. Serve with a balsamic vinaigrette and grilled crusty bread.
