I am making a cake for a baby shower on Saturday evening. I really want to bake, assemble and ice the cake on Friday afternoon. Is that too early? If it matters, it's just a basic marble cake with buttercream icing. If I can do it that early, how should I store it so it will stay fresh?

Hi! Friday is fine. Actually, you can bake the layers on Friday,let them cool completely on a cooling rack,then put each layer on a plate and cover them with plastic wrap. Then on Saturday morning or afternoon you can trim any spots if necessary and frost the cake. Have fun!

Friday is fine. I've done that before too - made it the day before. I made a baby shower cake that served 48 people and after I parked my car in our busy city, I had to take the bus about 6 blocks to get to my work with the cake. That was exciting for sure!!! Busy bus! The cake looked like a basinet with a basinet hood made out of a hollowed out styrofoam ball that I decorated in the wicker pattern. My son was 2 at the time and right in the middle of my doing the wicker pattern, he decided to bang to metal pot lids together. I had to scrape that part of the frosting off - builds memories. The lady didn't know until 3 days before the birth that she would be having twins. She found out on the day of our party. She thought her husband would be mad - naturally he wasn't.

No, that isn't too soon. I have made lots of decorated cakes and I usually make them the day before the event.

You can do it a couple of days ahead and put it in the refridgerator. Cover it with something so it doesn't dry out.
It should be just fine.
