I checked out the recipe and it looks like you could just omit the wine. typically when you cook with any kind of wine or spirit, the alcohol boils off in the cooking process and just the flavor is left behind. i don't think you have to worry about it. if that wont work for you, try various citrus fruit juices that have the kind of tartness that your looking for in your recipe.
with shrimp, i like to use lemon, lime or pineapple juices.

Others gave you some nice choices. I never have alcohol in the house so I use Ariel wine which is de-alcoholized wine. Graham Kerr always uses that on his shows (after he became a tea tottler).

I know in my local grocery store there are 100% non-alcoholic wines available for cooking purposes.

Have a look, you might find something.

You can buy non-alcoholic wine. Or just use more fish/vegetable broth and cut the salt a little.

if your worried about alcohol, dont worry, the cooking prossess kills all the alcoholic properties so its jus a flavoring.
