In a word: fiber. Whole grains have fiber, white flour doesn't. Fiber has no calories, but it fills you up faster because it absorbs liquid and swells, and slows down the conversion to sugar and absorption of it into the blood stream, so in effect you will eat less of the bread, pasta, etc., consume less calories, and your blood sugar level won't spike and then fade causing you to feel hungry in a short time. Fiber....good for regular elimination, too....is just plain healthy.

it is devoid of most nutrients and is metabolized as rapidly as table sugar. it causes rapid increases of serum glucose and serum insulin. white flour is basically a energy source that is devoid of any usable nutrients. the body needs energy sources that are low in calorie and abundant with nutrients to function properly

because white flour is almost pure carbs. which convert to sugar in the digestive system which is bad for you in its pure form.
