I went backpacking several years ago, and personally, I hated getting gifts from people that they thought would be great for me to take... I only brought the essentials, and I hated the guilt of not using the things that were given to me. I wound up bringing a few things out of guilt, and then I was upset that I was carrying extra things that I wouldn't use...
So-- some of the gifts/things that I used and liked:
A slim clock/calculator. It was about the size of a business card holder, it instantly told you the time in all time zones (and knew to adjust for daylight savings), was an alarm clock, and doubled as a calculator.
Travel-sized products-- small toothpaste/shampoo/conditioner, etc. These are especially nice if they are the brands that she usually uses. You can also get wipes, deodorant, mouthwash, anti-bacterial hand stuff, hair gel/spray... all in travel-size.
If she is traveling in the summer, one of those (small!) battery fans seems like a waste of space, but is a life-saver when you are stuck on a train without A/C and windows that don't open.
Calling cards
Compact first-aid kit (small, and just the essentials!)
Luggage Locks
Instead of purchasing a gift for her, take the money you would have spent, and convert it to the currency of the country she is going to so she has some starting out money!

A travel themed scrapbook and embellishments representing the place they are going so that when they get back they can document their trip. Or, during discussions, see if you can come up with anything they might need- traveling abroad- what about adaptors for electronics, good socks, make up a little "backpacking" gift basket.

A packet of single-use items would be good for a present. I've been given/bought for myself single-use packets of:
- Purell sanitizer (for the plane/bus/whatever)
- Hydrogen peroxide (for small cuts)
- detergent/soap for laundry
- eye pads (Crabtree & Evelyn cucumber are great)
- tooth towelettes (for when brushing is not possible)
- facial cleanser
I also get TINY bottles of shampoo, soap etc. as it's easy to use up and get more new ones--keeps the weight down.

2. Adapters/Converters for her electronic devices
3. Phone cards
4. Very small/light photo book of pictures of her family/friends
All very practical things, but they make a world of difference when you are living out of a bag

Maybe get her a little photo album to carry pictures in like one of you and her so she can take you with her or some good hiking boots. This is a good company for outdoor activities that you can look at.
