I decided to make chicken soup today, so I boiled a chicken for an hour and a half. It's cooked, but has a strange pink hue to it. Why would this be and is it edible?

It's white inside, only the skin turned pink. Is it safe to eat?

Yes, I did take the intestines out before I cooked it.

Did the water in the pan cover the chicken while it was boiling? If not, that could be why the skin turned pink. If the chicken was bad or spoiled - BELIEVE ME you would have smelled it before you put it in the pan. I say it is fine.

Next time, make sure the cover the chicken completely with water while it cooks.

I would think so, just throw the skin away and de-bone it and put it back in your soup. An hour and a half is a long time to boil a chicken. The next time I would cut it up first and then only boil it for 30 to 40 minutes.

you boiled it. that forced out the blood from the bones and the protein coagulated. you have to barely simmer the chicken for about 6 to 8 hours.
