lasagna is easy. or you can try omelet or salad. steak is not hard to cook either.

cook something you dont use your hands for - it will make him look better if he isnt eating bar b q chicken and licking his fingers or getting it all over parents may think he has no table manners -
i would opt for something easy and simple that doesnt take long to make or eat so if hes their while your cooking the wait isnt long - this way if things dont go very smoothly or he is nervous he can get in and out and know what to expect the next time and be more prepared -
steaks are fairly easy to cook - 5 minutes on the first side and 4 minutes on the second ( 1" steaks and leave them out for about an hour before you cook them ( makes them more tender ) - serve with a side salad dinner rolls and maybe a flavored noodle or mashed potato -

Make it something simple. It should be something your boyfriend and your parents will all like but the main thing is to not stress yourself overly much. You'll have more than enough on your mind without fretting over a souffle. Concentrate on presentation, that will be what brings everyone together.
I agree... no finger food, no spaghetti. Pasta is good or if you have a food you are known for. I would do a hearty stew in the crock pot and fresh bread with a salad and a nice dessert but that's just me. Ham is a good choice too if no one has objections. I try to avoid anything that presents a choking hazard because while dad will love the guy who saved his life, it's just an embarrassment if it happens the other way.

If he is not a vegetarian you could make a beef casserole as it can be made beforehand and then you can enjoy the evening without the added stress of cooking it on the day.

Something that you know he's going to eat, and enjoy. You don't want him to be embarrassed by wanting to turn down something that he honestly doesn't want to eat.
But you said he's not picky.
I also recommend cooking something that he isn't going to have to eat with his fingers!! That's always a little bit awkward etiquette-wise for everyone involved.
My suggestion: Spaghetti, garlic bread, etc.

Everybody knows on a first date with the family, it defenitly has to be pasta.That way you can serve wine with the meal and things will go over alittle smoother....

if he likes everything just make something very simple that you cannot possible mess up & also try to serve alcohol to your parents first (if they drink)
they will be more relaxed, which means he will bemore relaxed
not too much though: you don't want them to forget that they met him

nothing he might spill on his shirt or spill like soup. no spaggetti, its hard to be polite eating spagetti. try something like a salad, and then serve maybe ravioli something small and quick to swallow if your rents wanna talk to him, u don't wanna tell them to wait because he's chewing steak or something
