you're adding flavor by frying (butter or oil)... also the browning carmelizes some of the proteins so they have a nice flavor. Frying firms up the texture so it's appealing.

I think it's mainly the added flavor from the oil you're using.

When an egg is cooked it becomes denatured. This means is changes into something different than what it was.

It is the actual cooking that makes eggs more palatable.
