Here is the tricky thing about makeing a very small recipe. it is very hard to cut an egg in half. I stripped down one of my favorite recipes to one egg for you here in this answer. The only way to make it smaller is if you beat the egg then cut it in half be weight, which is difficult.
If you are a lover of fresh cookies and dont want to have a ton around to make your waist grow, like mine. haha, then what i suggest is making the recipe and taking the addidional cookie batter place it in individual freezer bags to thaw and bake one cookie at a time. This should work perfectly for you!
Classic Chocolate Chip Cookie
1 1/8 cups all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup butter or margarine softened
1/4 cup granulated sugar
1/2 cup brown sugar
1/2 tsp. vanilla
1 medium egg
6 oz. semi sweet chocolate chips
Yield: 1-2 dozen cookies
Preheat oven to 375 F ( 190C ) In a mixing bowl combine flour, baking powder and salt. In another mixing bowl combine butter, sugars and vanilla. Beat at medium speed with electric mixer until light and fluffy. Beat in egg. Add flour mixture and beat at low speed until a soft dough forms. Stir in semi sweet chocolate chips and nuts. Drop dough by heaping spoonfuls two inches apart onto a ungreased cookie sheet. Bake nine to eleven minutes until edges are golden. cool completely. Freeze the rest of the dough in ziplock bags for baking at a later date.

This recipe makes 19 small cookies but if you just made them into large cookies, you'd have less of them - probably more like 5 or 6.
TOLL HOUSE COOKIES
1/4 + 1/8 c white sugar
1/4 c + 1/8 c brown sugar
1 egg white
1/2 tsp water
1 1/8 c flour
1/2 tsp baking soda
1 tsp vanilla
2 T butter
1/4 c mini morsels
1/8 c pecans
Mix all together and bake in preheated 375º oven for 10 minutes.
If you are going to make them into large cookies, lower the temperature to 350º and cook them longer - until they set up in the middle.

How about going to the market they have cookie dough already mixed and made up for you. Throw one or a couple into the oven and there you go, one or just a few (almost) homemade cookies.
