I just mashed potatoes to go with meatloaf, and I don't have any drippings to use to start gravy! Any other suggestions? I hate sour cream by the way

If you have mushrooms and onions or shallots, just brown a little with some butter (or oil) lightly salt and pepper...

Add the veggie broth and thicken with a corn starch/water mixture.

The sauted onions and mushrooms add a little more flavor than just plain broth. It doesn't have to be a lot, just one or two mushrooms chopped up and a tablespoon of chopped onions.

I guess vegetable is fine but it would taste better if you thicken it with a mixture of butter and flour (melt flour in butter over low heat in a pan, without browning it too much). For a more concentrated flavor, simmer your broth until it is reduced to around 3/4 of the original qty. You can add some herbs (thyme, peppercorns) for more flavor and aroma. Hope it tastes good.

Yes, I have done this from time to time, but I usually use chicken or beef. I like to add some extra spices, also.
