I usually just add them at the beginning of the roasting process. The potatoes soak up the juices from the roast and get nicely browned.

It may not be low fat, but it is very good.

First off I would slow-roast it from 350-375 degrees and add thepotatoes at the same time. You can always toss the potatoes in some olive oil and herbs prior to placing with the chicken for added flavour.

about 20-25 minutes before your bird is going to be done. Check them with a fork before you take them out. You can always cook them a little longer after you take the chicken out of the pan if necessary ,for a couple more minutes. If youare checking the temp with a thermometer ,try to gauge the time remaining by the temp it has reach in say an hour. Hope they turn out good

You need to, bring down temp to 350 and add potatoes. With the rest of the veggies and chicken. Like onions, garlic, celery, carrots, chicken stock, rosemary, etc.

I would add them right away. They can take awhile, and to cook them next to the chicken will give them a nice flavor. Try tossing them with salt, pepper, and parsley before you add them.
