As an Orthodox I was not aware of the covering with oil but I think the anointing(one"n" not two) oil has to do with the Pentecostal experience or perhaps the born again experience,
perhaps there is a Greek(Russian,Serbian,Ethiopian, Ukranian,
Finnish,Armenian, etc) Orthodox Priest on the forum that would shed more light. Even a Roman Catholic or Lutheran or Episcopalian might have the answer.

An olive twig was brought to Noah after the Flood (a type of baptism) as a sign of mercy from God; in fact, throughout Scriptures, oil is seen as a healing element and a sign of mercy. Thus, before anyone in baptized in the Orthodox Church, they are anointed with oil as a sign of the mercy of God covering them before being washed of their sins and brought within the Church. This is the first reason. The second reason is that oil was used in the ancient world to anoint or coronate royalty. Thus, the oil brings a grace to the one about to be baptized as a sign of the entrance into the Kingdom and to strengthen them for the journey ahead; life as a Christian means both being crowned in Heaven and preparing for battle, as Christ battled the Devil after His baptism.

the significant differance is that Orthodox Christianity (which isn't a range of Protestant) is way less centralised. There are some doctrinal differances jointly with the Primacy of the Pope which does no longer exist in Orthodoxy and the immaculate theory. there is also the count number of the filioque contained in the Roman Catholic version of the Nicean-Constinopolitan Creed it is not any longer contained in the Orthodox version. The Greek Orthodox church in united statesa. keeps a information superhighway web site which has some doctrinal education on it and that i'm certain that there are web pages that the Roman Catholic church sponsors with doctrines on them
