It depends how far you want stay from the Etna.
For a closer position my best tip is an hotel near to Zafferana Etnea - Hotel Airone - here's their link for booking and more info http://www.infoservizi.it/hotels/zafferana.htm
I've been there and it's good enough (3 stars hotel)
If you prefer different accomodations my suggestion is to use the Venere.com site. After you select city and dates, you can sort by area of the city, price, guests ratings, and read reviews of specific places. If you prefer to stay in a resort close to the sea (that's however not too far from Etna) I could suggest you to stay in Acireale http://www.venere.com/cgi/search/?geoid=822&lg=en&

There's not much up Mt Etna, except rubble, mist, tour buses, and some tacky souvenir shops.
