Yes but the Jackalope was a little too tasty, and 40 days and nights stuck on a shat filled ship caused Noah to cook them all.

Noah didnt have to bring ALL the animals into the ark.
meaning.
brown cow, spotted cow, white cow black cow etc.
he only needed to bring the generic cow and it adapted from there,
the same with dogs for example.
he didnt need to bring all the dog species, only the generic dog, most likely a mutt type.

It was right next to the unicorns. Though the male unicorn fell of and was eaten by a sea creature (hense no more unicorns).
