I like the chicken breast salad sandwich
I use mainly wheat bread toasted it a little,
then I open a can of chicken breast, drain and smashed well
add some mayo ( not too much and not too little), some relish to taste, salt to taste and small pieces of pecans, mix all those ingredients, then add an egg or more depending on how much I am doing, then mix it again with it. I add fresh lettuce to the sandwich and eat it with some Boston tea.
I also like sandwiches done with Luncheon loaf but I grill it and toast the bread a little, add mayo to taste, tomato, avocado and lettuce, and a little bit of salt, I also like to add some fresh white cheese, yuummmm.

Some people might think this is weird but....
Make some egg salad and spread it out on a tortilla, top it with shaved ham and wrap it up. It actually tastes great if you like the two individually. Also...
In keeping with the tortilla theme, buy shaved or thin slices of your favorite lunch meat, spread your favorite condiment on a tortilla, top with meat and/or cheese then finish it off with fresh shredded lettuce and diced tomato. You can add other veggies too if you'd like. Makes a great "on the go" meal too.

I make this every chance I get:
take deli sliced roast beef and pile on a paper plate, like the shape of your sandwich roll (I like a sour dough roll)
add a slice of American cheese (or two) to the top and microwave until cheese is melty.
Heat up the roll, add mayo, add the heated meat/cheese to the roll and top with a whole mild green chili (on top of meat) add shredded lettuce and tomato. You have a great sandwich with loads of taste.
Now I'm starving!

I love sandwiches with sourdough bread. I don't eat meat, so would make a veggie sandwich with cheddar, lettuce, tomato, red onion, cucumber, and avocado...possibly with a pesto spread. Or just a plain old grilled cheese with sourdough bread, Velveeta, and tomato.
When I used to eat meat, I LOVED BLATs (sourdough bread with bacon, lettuce, avocado and tomato). I also loved sourdough bread with peanut butter and bacon (weird, I know, but SO good). Can you tell I like sourdough bread??

Gotta have turkey,stuffing,cran sauce w/ mayo in a pita pocket.
Grilled cheese w/ tomatoes, onion, bacon and sweet/hot mustard on sourdough.
Shaved deli ham, cheddar cheese w mayo or mustard on lightly grilled Mediterranean sweet roll.

Kickin' Chicken Sandwiches Recipe
1 cup mayonnaise
1/2 cup commercial pesto
4 (4-by-4-inch) squares focaccia
4 skinless boneless chicken breast halves
Olive oil
Salt and pepper to taste
8 slices fresh mozzarella
4 canned artichoke hearts, drained and thinly sliced
2 plum tomatoes, thinly sliced
2 cups mixed field greens (baggeed lettuces)
Heat grill to medium-high.
Combine mayonnaise and pesto in small bowl; whisk to blend. Cut bread horizontally in half.
Brush chicken lightly with olive oil; season to taste with salt and pepper. Grill chicken until just cooked through, about 5 minutes per side. Transfer chicken to cutting board; cool slightly. Cut chicken on sharp diagonal into 1/2-inch slices.
Spread pesto mayonnaise onto cut surfaces of bread. Layer chicken, mozzarella, artichokes, tomato and greens onto bottom halves. Top with bread tops. Makes 4 sandwiches.
