BARBECUED BOLOGNA
1/4 c. chopped onion
1 tbsp. butter
1/2 c. water
3-4 tbsp. white vinegar
1 tbsp. Worcestershire sauce
1/4 c. lemon juice
2 tbsp. sugar, preferably brown sugar
2 tbsp. honey
1 c. chili sauce
1/2 tsp. salt
1/4 tsp. black pepper
Deli-style bologna, sliced in 1/2 inch thick portions
White bread for serving
For the sauce (makes about 2 cups) : In a large pan, saute onion in butter until the onion just turns brown. Add the water, vinegar, Worcestershire sauce, lemon juice, sugar, honey, chili sauce, salt, and pepper. Simmer for 20 minutes over moderate heat until slightly thickened.
Meanwhile, cook the bologna on both sides over a charcoal grill. Remove from heat. Place the bologna in the warm barbecue mixtture and marinate about 20 minutes. Remove from marinade and serve between slices of white bread, with coleslaw or baked beans on the side, if desired.
BOLOGNA & VEGETABLE BISCUITS
1/4 c. sliced onion
2 tbsp. shortening
2 tbsp. flour
1/2 tsp. salt
1 (16 oz.) can tomatoes
1/8 tsp. pepper
1/2 lb. bologna, cut in cubes
3/4 c. cooked & diced carrots
3/4 c. cooked & cut green beans
1 lg. can biscuits
Heat oven to 425 degrees. In large skillet, cook and stir onions in shortening until tender. Remove from heat and stir in the flour, salt and pepper. Cook over low heat and stir until mixture bubbles. Remove from heat again. Stir in tomatoes. Return to stove and heat to boiling, stirring constantly. Boil and stir for 1 minute. Then stir in bologna, carrots and beans. Heat to boiling again.
Now pour into baking pan, 8 x 8 x 2 inches. Place in oven, after arranging canned biscuits on top of mixture. Bake 25 to 30 minutes or until biscuits are a golden brown.

This is what I make with bologna. I slice and dice it and sautee in butter until brown. Add scrambled eggs to bologna and cook until done. Then I add cooked rice (brown or white) and a little soy sauce to the bologna/egg mixture and fry it up. It is delicious!

I love fried bologna sandwiches with melted American cheese.
Also use it as breakfast meat fried up along with scrambled eggs.
Make sure the cut a few slices in it before pan frying to keep it from bowing.

I saw this restaurant featured on the Food Network that sliced it really thick and grilled it, like a hamburger, and served it on a hamburger bun. It looked really good.
If it were me, I wouldn't have a problem eating it all- I love bologna and I don't care what anyone says.
