Stuffed baked potatoes.

Potatoes are full of energy-rich carbs and both sugar and fat-free. Also dirt cheap (pun intended).

Buy one large russet for each eater. Bake them, slice in half and spoon out the guts. Mix the guts with whatever you can afford to buy or whatever leftovers you find in your fridge. Add some butter and seasonings. Spoon the guts back into the empty skins, and bake again until it's hot again.

I like mine with meat and veggies mixed in and shredded cheese sprinkled on top.

The best feature is that each person can customize his/her own potato, so nobody complains about what they have to eat.

I have a family of seven to feed. We do this about once a week.

Enjoy.

This is easy and fast. Smother a chicken breast in italian herbs and your choice of spices. I like to add at least cyenne and paperika and some garlic powder. Braise the chicken in a pan to lock in the juices. Through a jar of salsa in on top of chicken after the brazing and simmer till done. Dependingon the pans you use times can vary. Make white rice and place in center of plat and use a varity of shredded chese to circle rice. Place chicken on rice and scoop some salsa on top and sprinkel with a little extra cheese. I use pepper jack chedda and mozz. enjoy

or oatmeal burgers

6 eggs
1 medium red onion
1 pacckage sprouts
1 cup oatmeal
sal and pepper to taste
* i add a jalpeno

mix eggs onions and oatmeal let oatmeal soak in the egg then fold in sprouts

in pan heat oil enough to cover bottom of pan and scoop mixture in pan the size of a burger. Top it like you would a burger. Some people think it sounds gross or funny but once they taste they are happy they did.

spaghetti squash - yes, that is what I said. You cut it in half and place it upside down in water in the microwave and cook on high for about20 minutes. Then put the other half in and do the same.

After you have the first half out, get the flesh on the inside out, it will look like spaghetti, follow with the second half

Put any type of spaghetti sauce on it and serve that as a full meal with some garlic bread

I get a rotisserie chicken, some chicken flavored rice (it's called "Rice Sides" from Lipton) and a vegetable of your choice. Cheap, easy, delicious, healthy.

rice with Campbells cream of mushroom soup.

Take cooked rice and put it in a frying pan and add Campbell's cream of mushroom soup and a little water. mix up until heated well, add water to get the consistency you want. We like ours a little thicker.

add cut up pork chop to this or serve on the side with chicken or pork. Kids will love it!.

You could grill chicken, boil some pasta, and then top it all with marinara or pesto. (Marinara's best when dealing with kids because the pesto isn't very appetizing to look at).

Spag bol? You can omit vegetables you don't like from the mince. Or chicken wraps.
