So, I'm making some cupcakes from a recipe that requires the use of 12 oz of cola. What does cola do to a recipe? I mean, does it make the cupcakes taste better? Fluffier? Heavier? What does it do!? :-)

I've read that the carbonation can make things fluffier and lighter.

More commonly though, I've heard of people using cola products as ingredients in barbecue and marinades... the acids in the cola help tenderize the meat.

The cola does three things: 1) It takes the place of fruit juice, because of its acidity it can be used in place of things like lemon juice, but gives the cola flavor instead; 2) It is a sweetener (it's basically corn syrup); and 3) It has a built in leavening agent - CO2, which can add to the effect of baking soda, but is usually stirred out in the process of mixing.

It makes baking recipes a little heavier and a little sweeter because of the corn syrup, in my opinion. If you're using it to replace fruit juice, for example, dial back on any sugar in the recipe.

if you like BBQ chicken this recipe rocks and is so easy

1 can of diet coke
1 cup of ketchup

mix together and pour over about 4 chicken breasts in the crockpot. Cook it in there for about six hours or while you're at work. the best BBQ chicken ever!

I know that I bake a ham and put coke on it . it makes a neat glaze for the ham . good luck .
