As much as anything else, it depends on what you get and what's in it, as well as who you ask, and what benefits you are trying to achieve :)
Your typical pork and beef parts mashed into a cheap balogna or hot dog, are going to be full of nitrates, as well as artificial colors, sugar, salt, and fat. If you buy lean cuts of turkey or chicken esp free range, organically fed animals, that have no preservatives, etc...these are going to be healthier for you.
If you have kidney problems extremely high protein in meat, is hard on you. If you are cutting carbs often a meat snack will be better than a grain snack. If you are cutting salt, you really need to be careful with cured meats.

it depends on the variety, some lunch meats are more heavily processed than others. take Boars Head for example that brand is basically all natural. some Boars Head turkey breast would not differ much from a nutritional or caloric standpoint than a whole turkey cooked at home.

I would have to say yes... even though I have not read any proof... think of it. How long do those big chunks of meat stay good in the grocery store?? There must be some potent preservatives in them to make them last... and I don't think that they're good for you. I like to make a roast at home and then slice up the roast for my own meat for sandwiches... no preservatives and I know what's gone into the making of the meat.
