i make this at least once a month when family comes over.
Alfredo
INGREDIENTS
1 onion, chopped
1 clove garlic, minced
2 teaspoons vegetable oil
2 cups skim milk (i used 2%)
1 cup chicken broth
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated Parmesan cheese
16 ounces dry fettuccine pasta
1 (16 ounce) package frozen broccoli florets (didnt use this)
In a medium saucepan, heat oil over medium heat. Add onion and garlic, and saute until golden brown.
In a small saucepan, stir together milk, chicken broth, flour, salt and pepper over low heat until smooth and thick. Stir into onion mixture. Continue to cook over medium low heat, stirring frequently, until the sauce is thick. Stir in Parmesan cheese.
Meanwhile, cook pasta in boiling water. Add broccoli to the pasta for the last several minutes of cooking. Continue cooking until the pasta is al dente.
Drain the pasta and vegetables, and transfer to a large bowl. Toss with sauce. Serve

Chicken thighs that I marinated in olive oil, lime juice, balsamic vinegar and orange juice, salt and pepper, then stuffed with red pepper, onion and feta cheese. Baked that for half an hour at 350 degrees then put a scoop of sauce which was avocado with tomatos, cumin, cocktail sauce and cooked shrimp. Served that with Quinoia.

Pesto. In case you don't know what that is, I put fresh basil, olive oil, fresh garlic, and Parmesan cheese in a blender. Boil pasta, then add pesto with sun dried tomatoes and pine nuts. Yummy

I'm away at university, so my parents love ANYTHING I make when I come home, just because I made it (it may also have to do with my mom not having to cook). But they particularly liked a spinach, sweet potato and chick pea curry I made with basmati rice...

Chicken Parmasean.
Breaded Chicken baked, then tomato sauce and cheese melted on top.

I made a fresh shrimp gumbo, on the 25th of Oct. My husband went out of town on the 28th. I'v been cook free. YEA! but my dogs miss my cooking.

Fried chicken, mashed potatoes, gravy, turnip greens, pinto beans, biscuits........my kids are grown and gone ...but they still ask for there most favorite southern meal every once in a while.
