As always condition of the weapons is paramount in pricing. I will offer ranges depending on the condition from fair to excellent. I will allow you to judge the condition. You also did not state whether the 870 or 1100's had ventilated ribs, RemChokes or what type of barrels.
The 870 Standard assuming it is not an Express $175-400
870 Wingmaster Mag (Not Super Mag) $175-425
If 870 Super Mag $250-550
The 1100 Standard $175-350
1100 Magnum $180-400
The Universal MI also has a few variants depending on barrel length, stainless, Teflon and of course the value of the scope attached which you do not provide information on. Assuming that this is a standard model military replica, satin Blue with birch stock the values again depending on condition should be between $160-300.
If it is the Model 5000 Paratrooper with the folding stock, walnut it would be $200-450 if stainless version up to $525 or so in great condition.
I would only ad about $50 for the scope, mount and rings unless you can determine it is an expensive scope and then price accordingly figuring only about a 50% retun on scope price attached to the rifle.
Hope this is helpful. Bear in mind that quite often weapons go for more than what I am estimating if sold on an on-line auction, but you are also paying a fee, plus you are risking the value because there is no bottom line to protect you on some auctions.

The 870 Wingmaster if in good condition could be in the range of $300+ to $500. The 1100 in good condt. could bring $400- $600. The Universal Carbine would broing around $300.

The Remington shotguns you have listed are very common and very popular guns. Unfortunately the 870 is also sold by the box stores like Walmart for under wholesale loss leader prices. I have seen Rem. 870 shotguns in all gages sell for about $200 to $250 new at those stores. So you will have to sell your used guns for less, depending on condition.
The Remington 1100 is a fine gun and should bring anywhere from $200 to $300 depending on gage and model and condition. They did make some premier models, top of the line with extras that would bring better value than the above prices. Without seeing them that is as close as anyone can come in a dollar amount

Gun prices vary from area to area, as well as the condition of the guns. I would go to a local gun and/or pawn shop for advice. An ethical and responsible gun/pawn shop owner will tell you the market value of your gun and a reasonable asking price. I would love to have that 870 Wingmaster. My brother has one, and I just love to shoot it. It seems I can't miss.

You could go on Gunbroker.com to get an idea of the prices..... the M1 by Universal would go for around $500

go over to barnes and noble bookstore, look thru a copy of "bluebook of gun values" to get a proper estimate of the firearms worth. Bluebook is usually slightly on the high side.
